Yes you can find them green!
I find them green here at my local grocery.
Maya Hawaiian plantains, PLU #3287.

The green ones cook up perfectly for tostones!
I let the ones I use for maduros get some black splotching...
The kids LOVE it when we let the peels get almost black & eat them out of hand.

Helps to talk to your produce manager...
At my local grocery - they were going to discontinue carrying the Hawaiian Plantains, I spoke with a worker in produce & asked when they placed the orders & who the manager was & they were happy to let me know! I called him & he told me he was taking a loss ordering them weekly - I asked him to just order them by the case & I would buy them that way - he couldn't do that.
He orders a new case in every 3 weeks now & I am there every third Tuesday to get my green ones!!
I have some on the counter right now!!
Probably go through 15# a month, more if I entertain!
