Default Maya Hawaiian plantains

SO I actually found some hawaiian plantains for sale at the grocery store and they were ripe. I thought to myself what a shame, since these are supposed to be THE banana for tostones. I tried them as platanos maduros but they were way to gooey for my liking. I used to be a fiend for maduros, but I made tostones the other day for breakfast and I think I may give up potatoes all together.

Question: Do they ever sell the hawaiian plantains in the grocery store green or are they always ripe.
