Fresh banana chips!
I have several 'Orinoco' fruits that are not fully developed thanks to Ike that I decided to slice up and fry tonight. They made some great banana chips and tostones to go with our taco salad for tonight's dinner. My wife kept telling me that I should throw them away (they do look a little sad as they never fully plumped up) but I knew I'd use them eventually. If anyone out there has any bananas that never fully developed this is a great way to use them. They were great with a little salt and dipped in salsa! :woohoonaner:

They are actually a little bland until you get used to them. Very starchy. If you are used to the store-bought ones that ara coated in sugar, you'll likely be disappointed. I like them because they are a little crunchy, depending on how thinly you slice them and how long you cook them. A little salt is a must and something to dip them in. I cooked some simply as chips and some as tostones, where I sliced them much thicker, cooked them a little, then mashed them with the bottom of a glass and cooked them some more.
I was in a nice restaurant in donwtown Houston the other night and they brought us out plantain slices, thinly sliced lenthwise, with 3 different dipping sauces. Very good! Of course, you could also coat the chips in sugar as well, I've done that once with cinnamon too and it was very good. You could try all of the above with green dessert bananas if you get anxious to try them. |

I'll be making some chips later today from the squirrel damaged bunch I harvested last weekend. I've tried dehydrating them too with not much luck. Tostones with hot sauce are a nice treat though!

Squirrels with hot sauce are good too! If you keep getting damage you might have to consider that!!!
