I'd recommend Lemons, Limes, and Kumquats. Those will give you lots of useable fruit. I also have grapefruit, oranges and mandarins in pots, but they really don't produce enough fruit to make them...

I had a sugarloaf fruit in a 1 gallon pot, it was a pretty small fruit but tasted great. Pineapples don't need much soil to grow, but the plants can get pretty wide, they love to jab you as you walk...

My Ponderosa has never grown very fast, either. I had 1 large fruit on it last winter, and it did get bigger this summer, but I wouldn't call it a fast grower.
You might try the Citrus Grower's...

It reminds me of the one I had, you may see some variegation loss in summer when in good growth, but keep the pot marked and it should come back in fall or spring. You have a nice looking plant!

I think I had one, the seller called it "Leprechaun", it was more of a Truly Tiny type of Musa. It arrived at my house very smushed but the variegation was visible- later it would only put out...

Put them in 4" square pots (the deep ones if you have them) and keep them warm. Once the roots are to the bottom and sides move them to a 1 gallon pot until you're ready to move them outside.
