I don't think the weather will harm them I live in Spring Hill and we have had frezees in the last two years that I have been growing them. I never cover mine and as of yet no damage.

That's what I do on my mature-size plants -- although the root system is so large I use 3 5-gallon buckets each with 1/4 cup per plant.

They did look a little on the too dry side to me also, unless you were just getting ready to water.
I'd put them in the shade for about a week, not semi-shade.

Roots take up moisture, among other things, and leaves lose moisture. If recently removed from a larger plant, moisture from that source is lost until the plant recovers and regrows its own roots. ...

Good guess, the underside pic does look very typical of that "Blue Java" bluish-green lustre typical of the underside of their leaves.
That's about the closest I'd care to come to making a guess...

It looks like the clone that is being sold in the US as Ice Cream, except for the open petioles. Mine has closed petioles.

It looks alot like my Ice Cream but from the pics it seems that they have an open petiole. Mine have more of a closed petiole.

I was thinking that each subsequent p-stem would still take around 18-21 months from inception to harvest, but that if you could get a good 2-pup rotation going, you'd get a harvest every 6-7 months....
