I just had a plant do this also. a Bordelone(SP)
it was a small plant to begin with 15" p-stem
It happened after a transplant it rooted and never grew from the top just out the bottom about 2''...

I have never heard of bananas in water rooting....
I would worry about rot. Maybe with some oxygen in the water..
I rooted a pup this year with ZERO roots and very little corm...directly in ground/...

You can get plenty of nanners to flower in zone 8.
I have what I think is ice cream flowerin now in 6
(38n) it is also on it's third year....
Now havesting is another issue...

I do not plan on harvesting these as that would take me into December most likely.
(My season is over mid October)
I do have plans on moving the pup, would it effect the visuals of fruit...
