Cow manure (as opposed to Steer Manure) is excellent along with compost, peat moss, perlite. Just make sure that the plants have good drainage and don't sit in water.

I personally would not repot just before the plant is going into the winter season, and the additional shock could be damaging, though NOT fatal.
Keep them on the dry side and clean up all ugly...

Seed-bearing bananas generally do not produce large tasty bananas. they produce bananas with seeds in the fruit pulp.
My favorite, which is Manzano, produces a fruit about 6"-8" (inches) in length...
