A fan blowing over the water will increase the evaporation rate adding the humidity you need.
Adding some ventilation or shade will also decrease heat gain and remove excessive heat.

No. Bananas are typically a tropical fruit. Some will die if it's in the 50's. many will die or get damaged in the 40's.

I've got an antique banana knife. I'm Not sure who makes it. The Maker's mark is worn off. It looks like the Hibbard Spencer Bartlett & Co. knife. It's about 10" long in total.

I tried but they're too short to be multi purpose. I found a long heavy blade serrated bread knife works great for all banana chores.
I got mine in a thrift store for a dollar.
