You can use pretty much any Plantain cultivar you can get ahold of, there are only very few available in the US anyway. Sweetness is determined by ripeness level, not by cultivar in this case.

Use the 15:15:15, you want a balance of nutrients, not just nitrogen. The balanced fertilizer will supply nitrogen in addition to phosphorus and potassium, both of which are also very important....

Seems more like a ‘Dwarf Brazilian’ or ‘Raja Puri’ at this point, not a Cavendish. Definitely leave the male bud, it will be critical for ID. Also, if all the dead flowers and bracts are staying on...
