It's normal for the old cut stem to die back so I wouldn't worry about that.
As long as the soil is well draining over watering shouldn't be a problem either.

I never ever water new plants unless the soil is dust. The corm has more than enough moisture and energy for it to thrive. When I figured that out I stopped murdering them.
