That's normal. My Cavendish does the same thing. Its out growing the old "shell". I usually pull them out and compost them.

Go ahead and cut them if you want shorter plants.
You may cut them in half if you want. Your plants will continue to grow just like normal.
If I do my cutting I do it when my plants are actively...

It's 100% metal. Assembly is tedious by yourself. Having a small woodworking clamp is useful. It is a little light weight but otherwise perfect for the task. If they included a pair of 1.5" S hooks...
