I don't know why you couldn't eat the stems of the basjoo. You certainly can eat the leaves, and they are really just extensions of the stem. You can eat the flowers but mine has never bloomed.

I don't know how many threads came up when you searched this, but I know there are several. I do know you can only use the merristem.. ie the growth point. :^)

The dome shape that you see there and have labeled as "meristem" is not quite accurate, it is more like what you have labeled as "cortex" along with "growing point"....
