Cooking Bananas: Maruya

Poster: chasbear (see this users gallery) Maruya is made by flaying the banana into a fan shape, dipping in an egg batter, deep frying then coating them with white sugar. Delicious! I've tried making them at home, but not with the same success that this vendor has. I've twisted their arm to get them to divulge their secret, but they claim there is none. Last year on the Island of Cebu, I also tasted maruya being sold by a woman from the front of here house, and her's was heavenly, made from dead-ripe sweet fruit.
