They have been planted in the ground for 2 months and after a 2 week long battle with caterpillars (which I don't think is the cause of the weird leaves, because they were like this before the caterpillars) I was hoping the leaves would start developing all the way. But no such luck yet... Any ideas?

Your plant is not getting enough sun try to move it to a better location... you are showing alot of greenage on your plant..(to much shade)

These ensetes are in full 100 degree sun from 11:00 am until about 6:00 pm.... It doesn't get but maybe, 5 hours of bright indirect sunlight. Not really much shade going on... Aren't maureliis completely green when in full sun? They turn red when in shade I thought.
