Hello Benecelest,
We use only astringent persimmons. Sweet persimmons are
usually not used.
First peel them and expose them under the sun whatever ways
you like. No preservatives at all. When they fully died up, white power-like materials come to appear. Then it's ready for
eat.

Can you tell me what is the process how to preserve the persimmons?

I've never eaten dried persimmon befor. But when I was young I bet into a green one LOL I never for got that.
