Yes, I'm in quite an exposed position, the south west winds come straight up the valley and rip through my nanas. I'm planning on an extension to the house next year that should improve things. I'm also putting in some bamboo and eucalyptus to try and give some cover

You can do either. It won't harm the nana one way or other. Leaving it that way looks more natural. Removing the browns will look like you are taking care of it nicely plus you are exposing the greens of the pstem that will help in photosynthesis. But not much.
