I was at a Walmart yesterday and noticed fresh green banana leaves for sale.

People here use them for cooking.

A farmer makes $0.35 per 10 oz platano, but it seems the real money is in selling the leaves.

We use fresh green banana leaves for cooking rice and pigeon peas - aka arroz con gandules.

We blanch leaf sections for a bit then cut them to fit the pot as a topping for the whole cooking time. Imparts a subtle but noticeable flavor to the dish. Very Carribean thing to do. I use Goldfinger leaves as they are large enough. For a stronger flavor use D Namwah - thicker leaves - more oomph.
