Default Growing galanga?

I like to cook with galanga, a ginger used in thai cooking. I'm in tropical Mexico and feel fairly certain I can bring some into the country from the north...but, have any of you grown it for cooking?

any tips?

It's Ginger. Hence, in our zones, it's a weed. Plant it, water it occasionally, and it will grow happily and easily. Just make sure it doesn't get flooded in the rainy season - that's the only thing I've ever found that could kill gingers.
