Ancient wheat and Celiac
 
If any of you are interested I found a type of wheat that may be safe for individuals suffering from celiac or other wheat ailments. People with celiac cant eat wheat because of an allergic reaction to a protein, specifically gliadin in wheat. This old variety is Einkorn and has a different form of gliadin that in initial trials showed no toxicity in people suffering from celiac.

I got some and made bread for my sister and her son who both suffer from Celiac. Her sons reaction to wheat is much worse than hers. They both ate it with no symptoms at all, none. So I have found a wheat to grow for my family.

I would like to clarify that I am not a doctor, that is my nickname. So I am not a doctor telling you to try this. I am simply letting people know about it. I think the more people know about it the more tests can be done. My family tested it themselves and we are good to go. I suggest talking with a doctor or something first. Unless you are as brave as we are and we just went for it.

if you have a bread machine, here are a bunch of alternatives..

wheat free and gluten free flours

Yeah we have tried all of those. My nephew was diagnosed almost 10 years ago so we have tried it all. Pastries like cookies and cake are easy in fact my sister has gotten so good you almost can't tell. That is coming from a foodie. Most people wouldn't know.

Bread is the hard part, if you have made gluten free bread you know what I am talking about. It is not the same at all.
