Scott's One Pan Banana Bread
This is in memory of Scott, Dan's brother.
1/3 cup vegetable oil 1 1/2 cup mashed ripe bananas (about 3 large) 1/2 tsp. vanilla 3 eggs 2 1/2 cup Bisquick (JIffy mix cheaper) 1 cup sugar 1/2 cup chopped nuts (optional) Heat oven to 350 degrees. Generously grease bottom of loaf pan(s), 9 x 5 x 3. Stir all ingredients until moist; beat vigorously 1 minute. Watch corners and try not to scrape bottom. Bake 55-65 minutes. Cool 5 minutes; run knife around edge and remove from pan. |
