Banana Chips made from Ae Ae fruits!
We start with two Ae Ae fruits Slice the Ae Ae fruits and fill a bowl with water (H20) and about a tablespoon or two (1tbsp. - 2 tbsp.) of salt (NaCl). Cut off the Ae Ae peels Cut them off like this: Soak the slices in salt water for anywhere from 30 minutes - 2 hours. Your fingers at this point probably look powdered sugar coated and feel like they're covered in flour. This step pulls starch out. Compost the peels. That's a Jamaican Red peel in the compost bin (thanks, Sean). I use this bin to bring the scraps out to the barrels. After waiting 30 minutes or so, drain the water, and rinse them a few times to remove the starch. Set them to dry in a row. Set them to dry in rows like this: Then, pat them dry with another layer of paper towel squares Any vegetable oil should work well. Here we use Wesson vegetable oil in a 2" or so frying pan. I prefer the oil be very deep. The oil should be brought up on 10 high, then turn down to 8 or so once it's ready for frying. Alternatively, measure the temp up until it reaches 350 degrees F. Fry the plantain chips in vegetable oil for a couple minutes, 1-3 minutes or so. Start with one chip Fry one chip first. Starting with one chip will get you a feel for the time it needs to fry - the combination of the thickness of the chip (1mm - 2mm) and the oil temperature will produce different results. As it is cooling, place two or three more in the oil. Place the fried chips on paper towels to dry. Flip them a few times to drain the oil. Then, garnish the chips with salt (NaCl) and let cool. My two Aussies have been eating Dwarf Cavendish fruits that got a little odd texture from the frost damge for about a month now. I use them for training treats and they love them!

Jordon, your Ae Ae is "the giving tree" and you're blessed to have it.

Jarred your chips looked tasty!!
With my Ae Ae I made our traditional latin dish, Fried Green Plantains " Tostones". See Photos Peel and cut them to about 1 1/2 inch Fry in very hot veg. oil Smash with either a plastic or wooded plantian smasher (optional you can use any flate surface to smash). Smash to about 1/2 inch Fry again for a few seconds, unitl golden yellow and garnish with salt. Very good Banana for Tostones!! Thanks again Jordon.

How long do you fry them the first time? I never got them to look that good. I use a glass to smash them.

I fry them about 1 1/2 to 2 minutes. Just enough to where it cooks the outside and very little on the inside.
A glass is perfect.

![]() There's a good dressing for the mariquetas or tostones made from minced garlic, onion, salt, vinegar, and olive oil. Mix up those ingredients and dip them in or pour it over and let them soak in a thin layer of it in a bowl. Last edited by MediaHound : 06-06-2007 at 06:58 PM. |

It's a very good sauce for both chips and tostones. My mother showed me how to make it.
