Default Nuclear Tostones

This recipe was featured yesterday on Martha Stewart's show by Gloria Estefan. They looked so good!

Nuclear Tostones

SERVES 4 TO 6



2 green plantains

1/2 cup vegetable oil, for frying

Coarse salt

Mojo, for serving

1. On a work surface, cut both ends off plantains; score skin lengthwise in 3 places on each plantain. Wrap in paper towels, and microwave on high until tender, about 7 minutes. To test for doneness, insert the tip of a paring knife. Let cool slightly.

2. Cut each plantain crosswise into 1-inch pieces; peel and discard skins. Place plantains cut-side up between two sheets of parchment paper. Using the bottom of a bowl, press down to flatten into a disc. Repeat with remaining plaintains.

3. Heat 2-inches of oil in a large saucepan over medium-high until it registers 350° on a deep-fry thermometer. Add plantains in batches, being careful not to over crowd. Fry until golden brown and crispy, about 1 minute. Transfer to a paper towel-lined baking sheet; season immediately with salt. Serve immediately with mojo.



MOJO:

Mojo

SERVES 4 TO 6

1/4 cup white vinegar

2 tablespoons minced garlic

Coarse salt and freshly ground pepper

1. In a small bowl, combine oil, vinegar, and garlic. Season with salt and pepper.
