Default Mofongo

I am kinda surprised this wasn't here already, but I always eat this when I am in Puerto Rico and haven't really seen it anywhere off the island. I've been told in Cuba that they call it fufu.

Anyways,

Mashed fried green plantains mixed with chicharones or bacon and garlic salt and pepper, then it is put in a mortar called a pilon, but I suppose you could use a small bowl. Then you stuff it with meat. I am a big fan of mofongo de cangrejo(Crab).

Bananas Brindando Re: Mofongo

Nicolas,

Mofongo is awesome. Nice and garlicky. My mom makes it for me now and then when I go visit, and she also does it as turkey stuffing.

The Dominican Republic has something similar called Mangú, which is boiled instead of fried and covered with onions instead of garlic. They also use melted cheese such as Velveeta mixed into the mashed plantains. Excellent stuff.

In the same vein, I'm a big fan of Pastelon- similar to Lasagna made with sweet ripe plantains instead of noodles and no tomatoes... Just layers of seasoned ground beef with cheese and layers of "maduros" mmmmmmmm

I have no idea where to get it in the palm beach area, but when I go to Puerto Rico, I get mofongo. My favorite place at the moment is El Makito at Playa Hucares, Naguabo. You are in the open air, right on the ocean with a mofongo of whatever you want from pork to octopus.

The Cuban variant, or Fufu, is when you boil some chopped plantains, then mash them in a bowl while adding a bit of milk. Perhaps they are too poor to add bacon/onions the like, but it is often topped with cheese. It might sound plain but it is delicious and healthy.

This is how I made it when I was in Cuba

Dominicans boil theirs too and some even started adding Velveeta to give it more flavor. Even though I'm Puerto Rican, I love all kinds of plantain dishes, whether it be fried, boiled, roasted, or nuked... nom nom...
