Default Best banana bread recipe

It's not heavy and gooey like most recipes, it's more like bread...

Best Banana Bread Recipe...

½ cup butter (softened)
1 cup sugar
2 eggs
1 cup mashed ripe bananas
1 teaspoon lemon juice
2 cups flour
3 teaspoons baking powder
½ teaspoon salt
1 cup chopped walnuts or pecans (optional)

Cream together butter and sugar.
Beat eggs then add to sugar / butter mix.
Smash bananas and add lemon juice. Mix. Add to creamed mixture and mix well.
Mix salt, baking powder and flour then add to mix.
Bake at 375 degrees until done.

Varieties I supposedly bought: Manzano, Cavendish, Blue Java, Sweetheart, and Gros Michel.
What it seems I actually have: Brazilian, Cavendish, Namwah, Dwarf Red, Gros Michel, Pisang Ceylon, Veinte Cohol and SH 3640, and American Goldfinger. FHIA 1, Paggi and FHIA 17... Always room for one more.

It tastes great! Thanks for posting. I prefer this to another recipe I found here that was gooey.

I doubled the recipe but when I dumped it into the baking pan, it only filled it to the very top. I left it as it was, which was foolish, but I did put a baking tray under it (thank goodness!!!). I checked it 45 minutes later because I forgot about it and tons had spilled out onto the tray. It all tasted very good however and is the best banana bread I have ever eaten! Thanks again for posting the recipe.

Ingredients:
  1. 1 cup all-purpose flour
  2. 1 tsp baking powder
  3. 1/4 tsp salt
  4. 1/2 cup granulated sugar
  5. 1/2 cup mashed ripe bananas (about 1 large banana)
  6. 1/4 cup melted butter
  7. 1 egg
  8. 1 tsp vanilla extract

Instructions:
  1. Preheat your oven to 350°F (180°C).

Here is my wife's recipe. Never had better!



Ingredients

▢ 1 stick butter
▢ 1 ⅓ cups granulated sugar
▢ 2 eggs
▢ 1 teaspoon vanilla extract
▢ 1 cup sour cream
▢ 2 cups all-purpose flour
▢ 1 teaspoon baking powder
▢ 1 teaspoon baking soda
▢ ¾ teaspoon salt
▢ 1 cup ripe bananas (mashed)
▢ 1 cup chocolate chips

Optional: 1/2 cup chopped walnuts or pecans

Instructions

Preheat oven to 325°F. In a large bowl, cream butter and sugar. Then mix in eggs, vanilla and sour cream.
In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Slowly add flour mixture to sugar mixture and stir until combined. Fold in bananas and chocolate chips.
Pour into 2 (8×4") loaf pans and bake for 55 minutes. If using a 9×5" pan, you can put the batter into one pan, but you will need to cook 10-15 minutes longer. You want the bread to be lightly browned. If it's browning too fast, cover lightly with foil. Remove from oven once a toothpick comes clean.
Once the bread is slightly cooled, remove from the pan and place on a cooling rack. Slice and enjoy with a cold glass of milk!
