Banana Pith with Sardines.
 
Here's my favorite survivor type recipe. Useful if you have a banana that was torn down in the middle of the stem. Just get the top half and use it in this recipe:

Peel off the sheats from a banana trunk, until you get to the white core that is about 2 to 3 inches diameter. I am assuming that your original pseudostem is a lot larger, like 9 inches diameter or more. If your trunk is smaller, then maybe just leave 1-2" diameter of the white core. Thinly slice the white core into small pieces, soak in water with citric acid as you slice it. Then squeeze as hard as you can with your hands and put in ziploc bags store in freezer for future use, or use it in the next step below.

Sautee 8 oz can of sardines, preferrably the one in tomato sauce. Then add two cups of the sliced and squeezed white core, and add one cup water. Cook medium heat for 10 minutes add salt or soy sauce to taste then serve. Very good source of fiber. Highly palatable.
