Ensete maurelii trouble

I have been doing hours of reading trying to figure out what is wrong with my Ensete maurelii (this is my first post). I have a few varieties of bananas (musa basjoo, blue java, musa zebrina, Ensete lasiocarpum) and this one is the only one I am having trouble with.

Some details . . . I am in Arizona, zone 9b. All plants are on drip system and checked almost daily. Soil here is mostly clay and alkaline. When I plant my bananas I dig down at least 2-3ft and backfill with cactus soil, lava sand as well as native soil (which has worked great for all of my other plants). I use cedar mulch (no dyes) around all of my plants here in the spring/summer.

This is the only banana I have purchased from a big box store but it looked great when I purchased it. I slowly acclimated it to the sun over the course of 2 weeks before planting in the ground. it is currently planted in full sun (south exposure).

This post from awhile ago gave me a little information but was inconclusive:

The current problems are soft spots (the base feels pretty soft in spots) but I do not see much in the way of black spots and loss of red coloring. It is putting out leaves at least once a week, but note from my pictures that all new leaves have lost all red coloring! In the thread I mentioned above there was talk about both PH and some saying too much sun, some saying not enough. I'd like to eliminate to figure out what is causing the leaves to be green now. I can easily put shade cloth for the afternoon if needed. I am trying to figure out where to start in terms of addressing both of these problems and identifying what the root issues are.

Sorry for the long post! I appreciate any suggestions.

Hopefully these pics will help:

Re: Ensete maurelii trouble

Well I dug this guy up today to see what was going on. Some of the stalk was black and soft - I cut all of these parts away until everything looked good:
