This is an excellent cooking banana and has some very appealing qualities. This is the easiest banana to peel when green. Has similar plantain-like qualities for preparing tostones. After boiling it maintains a much better color than a Cavendish. The FHIA-21 will be replacing my FHIA-01, 02, 03, 17, 18, 23, SH-3640, & Goldfinger. I'll be adding more to this post.
