Thanksgiving Recipes!!
Here is my Southern Comfort Sweet Potato recipe!!
Southern Comfort Sweet Potatoes 4 pounds sweet potatoes or yams 1/2 cup butter or margarine 1/2 cup Southern Comfort Bourbon 1/3 cup orange juice 1 teaspoon ground cinnamon 1 cup honey ¼ tsp salt 1/2 cup firmly packed dark brown sugar 1 teaspoon salt 1/3 cup chopped pecans.(opt.) In a Large mixing bowl add butter, bourbon, orange juice, brown sugar, honey, salt and cinnamon, beat until well combined. Wash, cut and boil yams until soft. Drain well & mix into the large bowl with Bourbon mixture,taking care not to mash the sweet potatoes. Put in large baking dish. Sprinkle the pecans evenly over top if desired & any add’l brown sugar to taste. Bake at 350 degrees F for 45 minutes or until lightly browned. Can be made ahead and reheated before serving. ENJOY!!! Here's Mom's recipe for cranberry sauce.
Cranberry Sauce 1 pkg. fresh cranberries 2 1/4 cups sugar 1 teaspoon almond extract grated orange (1) and lemon(1) rind 1 cup water Bring cranberries to boil in 1 cup water.When all have burst, remove from flame and put in a food mill to remove skins. Take remaining jelly and add sugar; bring to a boil again. Then add almond flavoring and rinds.Put in refrigerator to cool. For a large crew, we routinely double the recipe. |
Thanksgiving Recipes: Cranberry marmalade
I love cranberry on thanksgiving!
Love it so much that for years, I served it right out of the can. Three years ago, I picked up this simple cranberry marmalade recipe from Martha Stewart's Living magazine. Cranberry Marmalade makes about 4 1/2 cups 5 juice oranges, chopped into 1/4 inch dice (including peel) 5 cups fresh cranberries 2 1/2 cups sugar 1 cup water In a medium saucepan, bring all ingredients to a boil. Reduce heat, simmer until mixture is the consistency of loose jam, about 35 minutes. Transfer to serving bowl. Refrigerate if desired, can keep up to a week in the fridge. I also love this on buttered biscuits, toasted muffinss. Enjoy! |

Here's a simple recipe for the perfect dessert when you already stuffed!
Strawberry Ices 3 cups fresh strawberries (frozen will do out of season) 3 teaspoons lemon juice I cup orange juice 1 cup sugar We use a metal oblong cake pan. Blend 1/2 of berries and remaining ingredients in blender until smooth. Add remaining berries. Freeze about 2 hours. Break up in chunks, and beat in mixer until smooth. Refreeze. For larger portions, double the recipe. There are never any leftovers! |

Cheryl, that recipe sounds delicious. Mom and I were discussing adding it this year to the festivities. We always end up with 2 or 3 sweet potato dishes! mjd's marmalade also sounds great.Using oranges chopped whole is very intriguing.

Here is another 'Mom, Mom...are you making this?' recipe:
'Asian' Green Beans 1 lb fresh green beans, trimmed 1 tablespoon chopped scallions or onion garlic to taste ginger to taste 3 tablespoons oil 1 tablespoon sugar 2 tablespoons soy sauce 1/4 cup water boil beans for 3 minutes. drain and plunge into cold water and drain again. Saute scallions, garlic and ginger in hot oil for 1 minute. add sugar and soy sauce, cooking until sugar dissolves. add beans and water, reduce heat and stir fry for 2 minutes Thank you for all your 'raves' on the SoCo Sweet potatoes...feel free to modify it to your tastes! Cheryl, your sweet potato recipe was a hit here -thanks! I would use less honey & mor brown sugar next time (I love them w/ b sugar). mjd if you're here, thanks for mentioning the brine. First time I did a brine - soaked for 6 hours in salt, fine chop or grated carrot, celery, rosemary, thyme & it was THE BEST turkey I ever made or even had. Thanks again for the idea. |
