Okra seed recipes?
 
Someone gave me a bag of old okra so I simmered it and collected the white seeds. After umpteen rinses, the snot is finally gone; I hope!

Why do I ask? Because once upon a time I had some recipes for them before I had 2 cups of them but cannot find them now. Searches show up a few interesting uses but I'd love input from any of you southerners willing to admit that you've had some honkers you didn't want to toss so found a way to make something yummy with part of them. (Yes, they are good plain though not very flavorful; if I were on my own, I'd add them to stir fry for bulk though that's pretty boring.)

Anyone?

Salt, Pepper & Olive Oil on a cookie sheet and bake 45 min on 450. Now this pertains to thin sliced okra.. Not just seeds.. :^)

No pods left at this point; I should have asked first I guess. I've broiled/grilled/baked old ones that tasted fine but these were beyond woody plus had sat in Alabama in a car for a few days. Any ideas on how to use the "pearls"?

Well I can tell you that okra recipe is good eating, just towel off extra olive oil and add Tony Chacheries to taste.. It's all good.. :v)

Crispy Okra

1 lb - Okra (cut into small round pieces)

1/2 cup - besan flour

2 - Red Chilli

1 tsp - Mustard Seeds

1 tsp - urad dhal

2 tsp - curry powder

8-10 tsp - vegetable oil

1/4 tsp - Turmeric powder

Salt to taste


Heat 2 tsps oil in a pan. Put mustard seeds, red chillies, urad dhal and allow it to sputter.
Add okra to the above seasoning.
Cover and cook for about 5 mins with salt, turmeric powder and curry powder and mix well.
Sprinkle besan flour evenly and mix. Add 2 tsp of oil from the sides of the pan.
Allow to cook for 2-3 mins.
Turn off heat and allow it to remain for about 3-4 minutes.

Okra in Szechuan Sauce

250 gm - Okra

5 tbsp - oil

1 - Star anise

1/2 cup - minced Onion

2 tsp - minced Garlic

2 tsp - minced Ginger

1/2 cup - chopped Celery

2 tsp - minced Green chilli

1/2 cup - minced Cabbage

2 tsp - roasted chilli paste

1/2 cup - Tomato sauce

1 tsp - Sugar


Wash okra and wipe them dry.
Cut into 3 cm long pieces.
Heat oil in a wok and fry okra till brown.
Drain and reserve.
To the remaining oil in the pan, add star anise, onion, garlic and ginger.
Fry till fragrant.
Add celery, green chilli and cabbage.
Stir fry for 30 seconds.
Add chilli paste and tomato sauce.
Add okra, salt and sugar.
Toss well and remove from fire.
Serve hot with fried rice or noodles.

Plant 'em next spring for an Okra crop all summer. You only need the soak in water and then strain out the seeds. If they have been cooked, the seeds are ruined for sprouting.

I've never seen recipes or seen a dish made with just okra seeds; or the white seed before it dried hard.

After doing a little research, I found as long as the seeds are soft, they are eatable like peas. Semi-hard seeds can be ground and used as a coffee substitute. Hard seeds are not eatable like the soft, but can be ground and used like flour.

plain and simple and great
a little oil in the pan slice okra thinly in to pan cut kernels off of two ears sweet corn in to pan salt pepper to taste cook till okra turns dark um um
