Default Cucumber Dip

A friend of mine gave me this recipe. It's really good!I don't know why all my recipes I'm posting are for cucumbers right now. I promise to post something else soon!

1 8 ounce block cream cheese, softened
1/2 teaspoon fresh dill weed, or 1/4 t dried
1/4 teaspoon salt
good dash of garlic powder
1/2 cup shredded mozzarella or swiss cheese
1-2 cups* peeled shredded de-seeded cucumber, ( Be sure you take out the seeds, it makes the dip runny if you leave them in)
1/2 teaspoon lemon juice

Mix all the ingredients together. It's better if you let it sit together a couple of hours in the refrigerator, but I never have that kind of willpower.
Serve with ritz type crackers, it's awesome!

*The original recipe calls for only one cup of the shredded cucumber but I found it tastes just as good and makes more with less calories if you add up to 2 cups cucumber.

This sounds great too! You do have a bit of a Cuc thing going on...LOL
I love cucumber dip.. Hubby isn't a big fan so we only have when we are cooking for family.. I will give yours a try I like the sound of the chunks....
Have you ever tried it on beef??? YUMMM!!!
