Corked and Grilled Pineapples
 
This, my friends, is my cookout specialty! Everyone that comes to my cookouts absolutely loves these pineapples. There are about 3 variations I use to this depending on my moods.
The variations only deal with the alcohol mix, after that the rest is the same. Now the recipe:

2 pineapples
2 liters of alcoholic beverage
1 grill at med heat (I use propane)
Prep time = 15 mins
Soak time = 8 hours
Cook time = 30 mins

#1. Cut and core 2 whole pineapples. No need to cut pineapple up, leave whole, and cut off top and skin.
#2. Place pineapples in tupperware same size or larger than pineapple (I use old butter tubs and ricotta cheese tubs)
#3. Pour in your favorite alcoholic beverage and cover or almost cover completely.
#4. Place in fridge 8 hours or more (I usually do this either nite before or early morning of cookout).
#5. THE FUN PART! Take pineapples out of fridge and cut in half (you can core at this time if you wish). Place pineapples on med. heat grill top rack. Close lid and allow 10 mins. Turn over pineapples every 5-10 mins. Whenever you turn over, (before I get to this part, I will put in a word of caution......do not do this indoors or in garage or a covered patio, you will make tall flames!!!) pour some of your concoction over the pineapple halves and allow to burn off.
#6. After 30-40 mins on the grill, pineapple should be nice and soft and juicy, time to take off and slice into bite-sized pcs. and enjoy!

Be warned! These can be just as potent as a vodka corked watermelon!!

The variations:
Var #1. Just plain old $4.99 dark rum.
Var #2. 50/50 dark rum and 40 proof Southern Comfort
Var #3. Equal parts dark rum, SoCo, and 40 proof cherry vodka

I personnaly prefer #2, my wife loves #3. You do not need to use these variations, as you can figure your own if wanted, these are just the ones my cookout patrons enjoy the most.

Do you mean 40% alcohol - which is 80 proof? (% x 2 = proof) I never heard of 40proof Southern Comfort LOL.
