Cmmon beans lovers, share Your recepies
Well after cooking one of my favourite dishes, "pasta-fagioli" for dinner tonight just cane on idea about this thread where some of us "beans lovers" can share few recepies and tricks ;).
Pasta-fagioli: In a large pot over medium heat pour in olive oil, better if it your own :). Saute whole garlic cloves, onion, bacon and red pepper flakes; cook until onion is translucent. Add tomato sauce, vegeta, basil, oregano, salt and pepper; cook on low for 10 minutes. Add brown beans and water, cook for 60 minutes. Remove the whole garlic cloves, discard few and crush the remaining. Add uncooked pasta and continue cooking until pasta is done. Its recomended to drink nice red wine while cooking :). :woohoonaner: |

Here's a quick veggie bean recipe and it's easy:
1 cup (or can) each: drained chickpeas drained black beans drained white beans drained red beans 1 can or 1 1/2 cups diced tomatoes 1 8 oz can tomato sauce 1 cup chopped onion 1 tbs minced garlic Your favorite chili spices in the amounts you prefer Add everything to crockpot, stir and turn on low. Go to work. Come home to a tasty meal. Serve with cornbread. Have your favorite red wine or beer. Or iced tea. |

Slovak vengeance:
2 cans of beans 1 tea cup full of chilli pasta (chilli, water, salt, garlic...) 3 tea spoons of Ante's olive oil 1 sausage as much ketchup as u want. Open the cans and even despite it says "cooked" or "already boiled" alternatively "not for cooking", ignore these sentences and pour the beans into a crockpot, stir every once in a while, don't let the beans burn from the bottom and turn black. The amount of heat is irrelevant, although I usually turn it to low. Once the beans start boiling, quickly add 3 tea spoonfulls of Ante's olive oil, as much ketchup as you please and at least a tea cup of chilli pasta. You shouldn't cook the chilli and ketchup more than a minute, otherwise it will change flavor. So give it 50 more seconds after pouring the ketchup in and then serve with the sausage I forgot to tell you to start grilling. Best served with cold beer although I certainly don't advise you to drink it after or with the beans. Bon Appetit. Menestra Dulce
1 cup of red or brown lentils, duly soaked and drained 1 cup of broad beans, fresh is best 1 cup of fresh strawberry beans, fresh is best 1/4 cup of panela or other brown sugar 4 cups of water a pinch of cumin a pinch of cardamon (black) a pinch of cinnamon (powdered) a pinch of cloves (ground) about 1 tbsp of olive oil - use Ante's if you have it. Pitch all the ingredients except the oil into a large stainless steel pot, and simmer over low flame, skimming off the scum frequently, until the broad beans are tender. Drain, reserving the liquid, and remove about 1/4 of the mix. Put this in the blender and pulse with a bit of the liquid and the oil until it's a paste of medium consistency. Slop this back over the rest of the legumes and mix well. Serve as a side dish along with rice, to accompany just about everything. |

I really want to try your recipe, Lorax. I know that broad beans are fava beans, but what are strawberry beans? I did an internet search but can't find anything. Want to sell some seeds? :goteam:

Bob's Venison Chili:
3lbs combination of ground and cubed venison 3 lg onions chopped up fairly fine 3 bell peppers(red and green) chopped Couple celery stalks Bacon 1 can 28 oz whole tomatoes Chili powder to taste (I use a ridiculous amount) salt, pepper, and Garlic powder Hot pepper flakes ( I use lots) 2 cans Kidney beans 15 oz 1 can pinto beans 16 oz Optional: habanero powder if you can find it......use only a small amount to start, you'll be surprised how little it takes. In one pan start the bacon and cook till done. Remove bacon and save the fat ,in this pan add the chopped vegetables and cook till barely tender. In separate pot brown all the venison in either some of the reserved bacon fat or if there's not enough some vegetable oil works well enough. When the meat starts to brown I start adding chili powder a few table spoons at a time. When the meat is done add even more chili powder , the remaining spices and the vegetable mix. Heat till boiling then turn down to medium and cook covered for 1 hour. Add the beans and cook uncovered for at least a half hour. During the last stage it's a good idea to taste and add more chili powder/ hot pepper flakes etc. if necessary. Serve with cold beer (did I even have to mention that?:ha:). It's even better the next day! I forgot to add that I just nibble on the bacon while all this is going on! |

Strawberry beans are sort of red-flecked white beans. I think you might call them Pintos.

One of my favorites is to take some pintos, about 2-3 cups, soak them in water overnight, drain
Then put them in the crock pot and add 1 large onion chopped 1/2 cup chopped celery 1 teaspoon cumin 1-2 cloves of garlic a bell pepper or two roughly chopped, or an anaheim chile or two a bay leaf and 1/2 t oregano some salt to taste optional-a few ham cubes, ham hocks, neck bones, or you can leave it out too. I like to save all the juice when I cook a ham and freeze it and use it in beans and soups later on. add water to just about the level of the beans cook till tender, then add 1 quart of tomatoes, home canned, or a big can of store bought ones if you don't have home canned ones. Dont add the tomatoes at first, the acid in the tomatoes makes the beans not soften up right. This is really good served over rice, and you of course can adjust the heat level with your favorite hot peppers to taste. |

1 500 g of beans.
2 To cook: 1 carrot, 1 onion, 2 cloves, garlic, bouquet garni, 100 g of bacon rind, pepper, salt. 3 Meat: 500 g shoulder of lamb, 200 g fat breast, 1 knuckle of pork, 6 pieces of sausage from Toulouse, 1 sausage cooking. 4 To cook meat: 100g goose fat, 3 carrots, 2 onions, 2 cloves garlic, 1 small can of tomato paste. 5 Soak the beans the night before. 6 Drain and cook with the ingredients listed, covering them with cold water 1: 30 pm to 2 am (30 minutes in pressure cooker), add salt at the end of cooking. 7 Cut the mutton and bacon pieces, then brown them in goose fat with the knuckle of pork and sausages with a fork stuck. 8 Add the carrots, chopped onions and crushed garlic, then tomato paste and sausage. 9 Wet in the amount of water to cook beans and simmer 1 hour (20 minutes in pressure cooker). 10 In a baking dish, place meat and beans in alternate layers (cut the sausage into slices). 11 Dampen a few ladles of cooking meat, sprinkle with breadcrumbs and let grill. |

Ingredients for Garbure Béarnaise:
3 duck legs confit 1 heel of dry ham 1 tsp tablespoons goose fat 20 cabbage leaves 250 g of beans from Tarbes 500 g potatoes 250g shelled broad beans 250g of turnips 250g carrots 2 shallots 2 cloves garlic 1 stalk celery 2 leeks 1 bouquet garni 2.5 l of water or chicken broth Technical phases for Garbure Béarnaise: The day before, put the beans to soak in warm water. Change the water 2 times. Blanch the ham into the boiling water 5 minutes starting cold. The same day, peel and wash vegetables. Cut the carrots, turnips, potatoes, diced. Finely chop the garlic and shallots. Chop the leek and celery, cut the cabbage into strips. In a large pot, cook ham, duck legs, broth, beans and bouquet garni for 45 min. Sweat 5 min in goose fat, carrots, turnips, leeks, celery, then add to the casserole. Cook 30 minutes over low heat. Blanch the cabbage, and add potatoes and cook again for 30 min. Add beans 5 minutes before end of cooking. Season, remove the bouquet. Serve immediately. |

I love beans!! I eat fried beans with cheese and salsa and gluten free been burritos! Anything with beans I will eat!! Especially Lebanese food with beans!
