Default What can go dorment

can every banana make it . even tropical bananas or just cold hardy and what is the best way to let them go dormient and something else some of my bananas are to tall for my greenhouse can i cut the bananas to fit my greenhouse . i would like to get fruit next year. thanks for your info.l
