Tips for freshly dug up pups

I need some advice on how best to treat pups that are freshly dug up, and full size trees dug up to be brought in for the winter. I always leave most of my large trees in the ground and just cut em down and mulch over for the winter. But during the summer I dig up pups to sell and give away, and I put them in buckets of well draining soil usually made up of compost and mulch. Should I water them right away or let them stay dry or what...it seems like I lose almost all the leaves, they turn yellow and some brown and then they sit for a long time before new growth finally occurs. Used to be I would only lose 2 or 3 leaves and then growth would continue...I don"t know what I did different. I also just dug up a big boy to keep in my garage over the winter. I don't want it dormant as I am hoping to keep it growing albeit slowly, and maybe I can get fruit next summer.

For best success I'd say get those newly potted pups growing as soon as you pot them using warm bright conditions to establish new root growth. Then you can let them go dormant a little later in the season.
