Plant stems bending - no longer straight upward
 
Two of my three plants are just under a metre now but both are bending over.
I have moved their position in case they were leaning towards the sun but it seems to make no difference.

I have a moisture meter which suggests that they are not too dry but not knowing just how wet they should be I am none the wiser.

Do they need more water or is it the light?

I read somewhere once that too much nitrogen will produce "weak, watery, growth." I don't know about bananas, but in my palms the emerging leaf spikes suddenly began to bend over and actually crease in the middle. It took a while for the time-release fertilizer to go away, but after that, the problem went away.

It isn't uncommon for pstems to start leaning as they prepare to bloom -but I don't grow in pots - what variety are they?

Many times when a plant is close to a wall it will lean away from it. Your plant will also lean towards the sun as you mentioned.
It takes awhile for them to correct themselves, usually weeks not days.
Your plants would show wilt/stress if it were lacking water or sun or too much of it.
This plant is very healthy .....just has a little too much lean.
