Ok, what do you do with unripe, immature bananas?
Looks like I'll have several that won't have time to mature. Anybody have any creative uses for them?? Any tips on speeding up the ripening/maturing process besides the paper bag over the bunch trick?

Bigdog-I have found (and others have mentioned it in the past also) that even though the fruit might not completely fill out it is still possible for the flesh that is there to ripen. From what I have read, cut them before the frost and hang them somewhere at room temperature and the fruit will probably ripen. I tried this last year with several of mine and although they were not very well filled out they did ripen.

That's kind of what I figured, Richard. I was going to pick them before frost, no matter how immature they were, lol! Do you think that the immature bananas would be better candidates for cooking? I was thinking that even if they did ripen, they probably wouldn't have as good taste as a mature, ripe banana would. Kind of like picking a green tomato and letting it ripen inside. Just doesn't taste as good as one allowed to mostly ripen on the vine.

Frank- I never tried cooking any of mine last year but you may have an idea. (The ones I had were actually pretty good even though there was not a lot of flesh in the fruit.) You could fry them up in some hot oil and make tostones out of them. You may not even need to flatten them in between fryings like you do with the more mature orinocos. If you give it a try, let me know how they come out. I am going to have several bunches of "not yet plump" fruit to work with this fall also. I am also always looking for something to do with them. It is a shame to just let them go to waste.

Yeah, it would be a shame to let them go to waste. The whole reason for digging and hauling these huge pseudostems under the house is to get bananas! I'll give it a shot with the recipe that AnnaJW posted tonight. I'll let you know how it turns out!
