Not sure how long that particular cultivar takes to mature, but in general, temperature and weather play a huge role on how long it will take to finish. Yours look like they need to fill out a little more, and they look more than half way done. They should be less angular and more round when they get closer to maturity. The general recommendation for hobbyists is to wait until a single finger turns yellow to harvest the bunch, but I'm sure there's exceptions to the rule. Once you're familiar with when to harvest a particular cultivar under your environmental conditions, you can stagger harvests so you have many weeks of bananas to enjoy instead of dozens of bananas that need to be eaten all in a week.
