Everyone here says, "hotter oil makes better tostones".
If this is indeed true why is corn oil used instead of an oil with a higher smoke point?

in costa rica they are called patacones..twice deep fried..corn oil is all i have ever seen used there..whip up some black beans and a little spice for a great dip for them
