O.K., maybe I'm the only one interested in this kind of categorization -- but here goes anyway!
I've started a new Wiki page that attempts to list flavors found in bananas and give examples of bananas that contain those flavors. Please put your suggestions here and I'll be happy to add them to the page -- or edit the page directly if you are a wiki editor. Info:Flavors Of Bananas - Bananas Wiki

Flavors sound great. So far I've tasted sour and sweet. I would like to hear what other flavors are out there.

No true banana flavor and the aftertaste was was bland. Like a very green naner that never matured to total sweetness. If you ever took a drink of tea with lemon and sugar after eating a sweet banana, you can get close to the tart taste trying to figure what happened to the flavor of the tea. As far as what type of naner plant, it was my neighbors and they didn't know what it was and chopped it down to build a room extension to their home many years ago. If I had to choose one of the two mentioned, it would be vinegar.

Hey! Would anyone else like to describe the tastes of the bananas they are growing, or add a category to the flavors list (Info:Flavors Of Bananas - Bananas Wiki) ??

I've added my 2 cents - for what it's worth, Gros Michel tastes a bit like Rice Crisps and Sweet Cheese to me - both flavour and texture wise.

What kind of banana that tastes 'sour' like? Specially vinegar taste. I am confused.

Oh, I see. Now I understand. My sister pickled almost anything. Pickled anything goes with fried fish. So you can eat your banana with fried fish (lol)?

Sweet cheese as in Mascarpóne or fresh Chanvre, or even unsalted Queso Fresco made with full cream and a bit of panela (mother of sugar). So yes, kind of cheesecake cheese but not quite since I associate Ricotta and Cottage cheeses with a more sour flavour.
