Welcome to bananas.org.

The leaves of your plant will probably get cold damage, but the p-stem will usually survive with temperatures in the 30s.
I do like to use Agribon frost cloth on some of my plants or at least to protect a few pups. Temps went down to 31F even here in SD and my tall plants look very sad, the pups were covered in the frost cloth, fruit bunches were harvested or covered in solar bags. If it does not get significantly colder, they will be OK, but my nerves are on the edge every winter if the temps drop that low.

I'm in the north valley, and even in cold years I've only lost leaves, and once a bit of stem. Just watch when things warm back up that you remove anything that froze / gets soft. We transition back to hot weather so fast out here that the dead parts of the plant (pseudo stem especially) can choke off new growth.

To you other question, I never take them out of the ground, in my opinion, the setback from having to regrow roots would be worse than the little bit of frost damage you risk.
