Greetings,
I'm from Semarang , Central Java , Indonesia. I have 4 kinds of banana species in my farm , but I'm afraid i cannot explain each one 's latin name ( have to check carefully. But 2 of them usually we cook it with coconut milk & brown sugar , and one of this cooking banana is so sweet , we get very sweet honey & caramel when we fry them.
It's an honour to be welcomed in this forum. I hope to learn a lot from my seniors.

Try to input to Google Pictures : Pisang Raja , Pisang Mas. The one we call pisang raja , the spottier they look , the more honey we get when we fry them. It's so sweet , when we make fried banana coated with rice flour & wheat flour , the outer part of the coating flour is always coated with many caramel !

Try to enter at google pictures , fill in query : kolak pisang.
Basicly , we cook the banana ( should be only Pisang Raja ) in coconut milk , brown sugar with fragrant pandanus leaf, and we can add up attap fruits. Very sweet , but I'm afraid , you will taste it a bit too sweet & fatty. Let me know if you want to try the recipe.
