View Full Version : Sweet bake ripe Plantain with Cheese!

Ingredients:

6 ripe bananas

1a 2 tablespoons melted butter or oil, use less if you prefer

6 thick slices of cheese, use mozzarella or other cheese that melts easily

Aji criollo


Preparation:

Preheat oven to 400 F.
Peel the ripe bananas, put them in a baking tray and rub with butter or oil.
Bake the bananas for 30 minutes, then Turn and bake for 15 to 20 minutes or until browned on both sides.
Remove the bananas from the oven, make a horizontal incision in the middle of each banana and fill with slices of cheese.
Let the cheese melts and serve immediately, with or without pepper according to your preference.

O M G! Looks scrumptious enough to blow anyone's diet.

I'm having baked bananas with cheese for breakfast today; is it morning yet? Well, technically, it is. Pardon me whilst I look for that banana I was saving for the kids' lunch bag.

Seriously, my stomach's vocally urging me to get up and feed it something.

Thanks, Emy! This can also be done on the grill, basting with sunflower oil, and using Queso Fresco in the middle. I can't recall what they're called here, but they're a popular roadside snack in the Amazon regions.

I know you posted "6 ripe bananas", but was wondering if maybe you meant plantains? They look like plantains in the pic, but I could easily be wrong. Looks excellent either way! Provolone I'm sure would work well also. Thanks!

Sorry, Yes indeed the recipe call for Plantains …Provolone is a great choice but any semi soft white cheese will be good .
