We have had 2 big bunches of fruit from this mat in quick succession - and as this is an exceptionally good plant with sweet and delicious fruit - we decided not to give all of it away, but to freeze some. Everyone locally who has been given fruit wants pups, so I guess we have a good thing going here.

And what a good decision! The slices freeze well and defrost quickly so they are ready for breakfast in a short time, and freezing them loose means you can pick as many or as few as you need from the bag. I think the freezing process must convert some of the starch to sugar, as they are better than ever when defrosted and a bit soft but not horribly so.

Apart from meat in my chest freezer, I have pineapple slices, mango slices, lemon juice cubes, and now banana slices as well as cashew apples that I am trying to decide what to do with - any recipes/advice for them will be gladly received - how do people manage without a big freezer? But I have to admit that mango is my all time favourite fruit - bar none! sorry bananas!

Same here. I think I might actually get some edible fruit from my Hayden Mango this year!

my mango tree is now 4 years in the ground here and I keep looking for flowers - supposed to be a large fruit export variety - I can't wait!!

Your bananas sound WONDERFUL and look beautiful!

I never thought about freezing them in slices like that! I've frozen them whole to use in smoothies and that is it! It looks like I'm missing out on alot of other ideas here!

Haha! Bob - I didn't have any chocolate to hand. But it will be easy to dip a slice in a pot of melted chocolate as the choc will solidify on the frozen slice immediately. Ready for instant eating I would think. Drool!!

Deb - the slices are great for on cereal or as a quick dessert as they defrost in next to no time.

It sounds great ... my grand daughter likes to skip the cereal and just have a bowl of sliced bananas in milk and sugar. Having them already sliced in the freezer would make it a snap!

How could I forget about chocolate covered? :ha: My grandson actually had my daughter buy some for me to do when I went up to Ohio to visit them a couple weeks ago. I'm not grandma... I'm Nana. :)
