We have had 2 big bunches of fruit from this mat in quick succession - and as this is an exceptionally good plant with sweet and delicious fruit - we decided not to give all of it away, but to freeze some. Everyone locally who has been given fruit wants pups, so I guess we have a good thing going here.
And what a good decision! The slices freeze well and defrost quickly so they are ready for breakfast in a short time, and freezing them loose means you can pick as many or as few as you need from the bag. I think the freezing process must convert some of the starch to sugar, as they are better than ever when defrosted and a bit soft but not horribly so.
Apart from meat in my chest freezer, I have pineapple slices, mango slices, lemon juice cubes, and now banana slices as well as cashew apples that I am trying to decide what to do with - any recipes/advice for them will be gladly received - how do people manage without a big freezer? But I have to admit that mango is my all time favourite fruit - bar none! sorry bananas!
