The fruit are supposed to be sweet, fragrant and seedless - perhaps I'll be able to let you know in a year or so.

They are edible, but you can't really eat all of them because the ones at the top can be ready to eat before the lowest ones are even fully formed, so you generally can only eat the upper ones. Other common names are 'Pisang Seribu' and 'Kluai Roi Wi'.

Couldn't one just leave the bunch on the plant and harvest fingers or hands from the top down as they grow and ripen?

You may be able to, but as I have seen, the plant has lots of problems, such as it will sometimes switch back and forth multiple times between the male and female flowers, so you will get a patchy bunch with empty spots. Also, it can sometimes hit the ground in which case you would probably want to cut it. I suppose if you managed it and took very good care of it, you may be able to harvest a lot of small fruits over a long period of time, grow one and find out!
