BANANA SALSA

1 Large, ripe banana, peeled and diced
1/2 red or green bell pepper, seeded and diced
2 Tbsp. chopped fresh mint or cilantro
1 scallion, trimmed and finely chopped
1 1/2 Tbsp. fresh lime juice
1 Tbsp. brown sugar
1 1/2 tsp. minced peeled ginger root
1 1/2" tsp. olive oil
1 tsp. minced Scotch bonnet pepper or I Tbsp. minced jalapeņo pepper
sea salt and fresh ground black pepper to taste

In a small bowl, combine all ingredients and toss lightly to mix. Serve within 1 hour.
Makes 1 1/2 cups.

Any kind of yellow or red banana should work! The recipe I had was made with a store bought banana and habanero peppers. It was really tasty!

Yes Benny, that is the way we ate it anyway. Maybe it could used for something else like on fish tacos?
