I see people saying 1-2ft but the main plant is less than 2ft! So when would be a good time to separate?

Well....how tall is the pup? If the main plant is only 2' I wouldn't advise removing the pup at this point.

Where in Houston are you located?

About 1.5 inches by now, it just poked throught about 3 days ago. Its a sword. I'm in Sugar Land.

Leave those babies be...LOL
They will take off and when they get up a bit
(a couple of feet) then I would think about removing them.. I had to dig up a couple of RP today. they weren't working in that spot replaced it with an Orinoco and put out a Dbl. White NOID Brug that has been blooming...

So let it get the size of the mom first? Mom is growing again pretty quickly so it could possibly be 3ft before a pup hits 2ft. First pup is reaching 5 inches now. I'm about to get a pic ready in my gallery.

See pix at http://webebananas.com/culture.html Section 5. Each variety is different - some have large plants with few roots, and some have small pups with a lot of roots. I have had 6 inch pups that didn't fit in a 15 gallon pot, and 5ft pups that could fit into a 1 gallon bucket. Pups over-wintered usually have more roots than new pups emerging in the spring. You have to get to know your variety.
