After some reading up it seems like I may be overwatering and not misting. Anyways to help them recover?

9/10 its overwatering when dealing with potted plants. Either ride it out with no additional watering or re-pot into drier soil and be careful about watering going forward. Also have to be careful about too much sunlight with small, young plants..maybe shade them from the direct sun with a net.

I've been planning too just with this situation it can be quite annoying. Any tips on how to loosen the roots would be appreciated though.

you dont need to loosen the roots. with the bigger pot its easier not to over water and the roots, if she is happy will go to the edge of the pot in a short period of time.
