does anyone know what would cause plumped out fingers to split vertically and subsequently rot prior to ripening?

Depends on the variety, some do that because thin skins. Others could be because of growing too fast and/or too much water (???). So it would be best to pick the bunch once they are filled out and ripen on the counter.
Post a picture of the bunch.

this is normal for mature fruit, some varieties do it more easily than others. The cure is to harvest earlier.

I've noticed with plantains it is more of a problem with heavy rain saturating the soil in hot conditions. But as was pointed out elsewhere, the cure is to harvest earlier.
