Hey Y'all-
I'm looking to start growing some lemongrass to add to my pending herb garden. I'm right on the low edge of Zone 8. I would love any and all info on this plant.
I thank you all in advance for the wonderful advice I am about to receive. :goteam:

Great stuff. I use it for erosion control, and for chop and drop. Line borders with it so you can easily manage your lawn(if you grow lawn) or separate gardens.
I chew on thick blades when working in the yard. We make tea with the leaves and "bulbs" and also cook many dishes.
It is a very important plant as is Vetiver. Use it the same way other than cooking.

I found some relatively fresh lemon grass at an international grocery a few months ago and bought some, peeled the outer few leaves and cut the dry end off with a very sharp knife, then put it all in water, it all rooted just fine (has since been transferred to dirt in pots, and will go into the garden in spring). I was just in Whole Foods today, and saw that they had some as well, although it didn't look as fresh as I might hope for if I was going to try to root it (you use what you can find...).
EDIT: forgot to mention, cut off the top part where it is dried out and will constrict new shoots. Some will continue growing from the center, but once it roots you will also see new shoots come out of the side of the base where you exposed more of the base by removing those few outer leaves. I also ended up splitting the plants vertically just to make sure the center growth wasn't bound up by the dried outer leaves

I was going to buy a gallon plant at the nursery, but I like your idea too. I may root some as well. I've had tremendous luck with the rosemary I rooted last year.

This lemon grass herb is a great addition to the Rosemary (http://www.medicalmarijuanastrains.com/tag/rosemary-taste/) in your herb garden.
These plants grow well in containers too.
This lemon grass (https://herb.co/cannabis/strains/lemon-kush)is an awesome addition to any Redwood (https://www.allbud.com/marijuana-strains/hybrid/redwood-kush)forest
I have copied in Snoop Dogs and Martha Stewarts brownie recipe for convenience.
There are also some great Emeril recipes for the extra .....bam.
These also pare well with wild game.

Interesting about the redwoods, as I may now have to turn it loose.

Lemon grass is a great aromatic container plant..
The plant looks good tucked in a corner and will produce when called upon.
A goto plant when aromatics are needed on the plate.
And in a recipe

I also found mine in a local market. I just peeled back some old leaves and dropped them in water. After seriously 3-4 days they were rooted! You won’t find an easier plant to root! Mine are outside and you can smell them walking by sometimes. Amazing plants! Root you some if you can find them! Very easy!

I took three from the gallon planter I bought, and two had a couple roots, while one got off above. I put it in water anyway, and it has rooted.
This leads me to believe that a careful cut will leave the roots in place to continue growing, while rooting what was taken.
In time, I will slice a few root sections off and see if they root. If so, we may have a new process for starting a bunch of new plants...
