I have just had my banana trees now for about 9 months and each tree has a stalk of bananas growing. I am not sure how the ripening process works and I am looking for support.

Unless winter forces your hand, keep a close eye on them and harvest the bunch after a few turn yellow. Some varieties will split if you wait like this, but I feel they are better and don't all ripen at once if you do this. Once they fill out, you can harvest anytime, though.
My Brazilians turn from a grass green to a golden hue of green about a week or so before ripening, so you might want to look for that as I don't know if they all do that or not.
